Anna Pavlova

She's a famous Russian Ballerina yes, but that's not what i'm writing about today. I'm featuring the very yummy dessert named after her, pavlova! It's still in the oven at the mo, smelling real nice, and there's a half hour more to go before she's done.

I used this recipe from
4 large (120 grams) egg whites
1 cup (200 grams) superfine (castor) sugar
1 teaspoon white vinegar
1/2 tablespoon cornstarch (corn flour)
1 cup (240 ml) heavy whipping cream
1 1/2 tablespoons (20 grams) granulated white sugar
1/2 teaspoon pure vanilla extract
Fresh fruit - kiwi, strawberries, raspberries, blackberries, passion fruit, peaches, pineapple, or other fruit of your choice
